
Focaccia is a simple flatbread that can be tasty all on its own, but it’s more exciting when you add toppings to your focaccia. Whether you want to keep it light with olive oil and herbs or go hearty with potatoes and onions, there are sixteen focaccia toppings to choose from.
Topping Your Focaccia
It’s easy to top focaccia. When your bread is ready to go in the oven, whether you use a mix or a recipe, add your focaccia toppings except for the cheese. Here is how:
- Let the bread rise according to directions. Dimple the bread.
- Add the toppings. Unless you want to make a pizza, keep them light. A quarter-inch of focaccia toppings or less will do. Do not add the cheese at this time.
- Use a pastry brush to brush the focaccia and toppings with the herb and olive oil mixture (1/3 cup of olive oil and the herb packet that comes with the mix).
- Bake the focaccia.
- Just before the focaccia is done, sprinkle it with the desired cheese and put it back into the oven for the cheese to melt.
- Serve the focaccia hot.
Baker’s Note: Focaccia toppings will increase bake times. With a thin layer of toppings, you will only need to add two or three minutes. It takes about two minutes for a sprinkling of cheese to melt.

1. Tomato and Parmesan Topped Focaccia
Thinly sliced tomatoes drizzled with an herb and oil mixture and a touch of basil turn this focaccia into a great meal.
- We used a mandoline to thinly slice three medium tomatoes. Spread those slices evenly across the focaccia when it is ready to go in the oven.
- Brush the focaccia and tomatoes with the herb and oil mixture.
- Sprinkle a tablespoon of basil over the tomatoes and bake.
- Just before the baking is complete, remove the focaccia from the oven and sprinkle it with parmesan.
- Return the focaccia to the oven to finish baking and to let the cheese melt.

2. New Potato and Onion Topped Focaccia
This topping makes for a real hearty focaccia meal with the onions and potatoes and a sprinkle of rosemary.
- We used a mandoline to thinly slice three small red potatoes. Thinly slice one half of a sweet onion. Spread the potato and onion slices evenly across the focaccia when it is ready to go in the oven.
- Brush the focaccia and toppings with the herb and oil mixture.
- Sprinkle a tablespoon of rosemary (optional) over the potatoes and bake.
- Just before the baking is complete, remove the focaccia from the oven and sprinkle it with parmesan.
- Return the focaccia to the oven to finish baking and to let the cheese melt.

3. Roasted Garlic, Spinach, and Parmesan Topped Focaccia
To turn your focaccia into a meal, simply add some spinach, minced garlic, and the oil mixture.
- Spread fresh spinach leaves thinly but evenly across the focaccia when it is ready to go in the oven. Chop two large cloves of garlic and spread them on the spinach.
- Brush the focaccia and toppings with the herb and oil mixture.
- Bake as directed.
- Just before the baking is complete, remove the focaccia from the oven and sprinkle it with parmesan.
- Return the focaccia to the oven to finish baking and to let the cheese melt.
4. Garlic Roasted Pepper and Mozarella Topped Focaccia

This focaccia includes roasted bell peppers, roasted garlic, a drizzle of garlic infused olive oil, and slabs of mozzarella. It really is a tasty focaccia that is similar to a pizza but better.
- Saute the bell peppers in pink himilayan salt to add some extra flavor.
- Spread the peppers evenly over the focaccia and drizzle garlic-infused olive oil on top.
- Bake as directed.
- Just before the focaccia is done baking, place slabs of mozzarella evenly across the focaccia.
- Return the focaccia to the oven to finish baking and melt the cheese.
5. Focaccia Pugliese
This savory focaccia meal is a common favorite from the Puglia region of Italy. It can be topped with either kalamata olives or black olives and cherry tomatoes.
- Spread either kalamata olives or black olives and cherry tomatoes over the top of the focaccia just before putting it into the oven.
- Brush the focaccia with the herb and oil mixture.
- Bake as directed.
- Sprinkle the focaccia with parmesan cheese just before it’s done baking.
- Return the focaccia to the oven to finish baking.
6. Fig, Pine Nuts, and Arugula Topped Focccia
A Fresco-inspired focaccia topping, this focaccia is topped with a fig spread, pinenuts, a light dusting of mozzarella cheese, and fresh arugula.
- Spread the fig sauce over the focaccia dough and sprinkle pinenuts on top.
- Without adding the oil and herb mixture, bake the focaccia as directed.
- Just before it’s done, lightly sprinkle the focaccia with shredded mozzarella cheese.
- Return the focaccia to the oven to finish baking.
- After baking, top the focaccia with fresh arugula and enjoy.
7. Caramelized Onion Topped Focaccia
In this focaccia topping, the onions caramelize while the focaccia is baking, leaving no extra effort on your end. It’s simple and tasty.
- Spread thinly sliced onions over the focaccia just before putting it into the oven.
- Brush the herb and oil mixture on top of the focaccia and onions.
- Bake as directed.
8. White Focaccia
This focaccia is pretty close to a white pizza with slightly less toppings and sauce. You can use alfredo sauce or ranch as the sauce.
- Before baking the focaccia, spread alfredo sauce or ranch on top.
- Drizzle the focaccia with the herb and oil mixture.
- Bake as directed.
- If desired, just before the focaccia finishes baking, sprinkle parmesan cheese on top.
- Return the focaccia to finish baking and melt the cheese.
9. Onion Dip Topped Focaccia
This focaccia uses the onion dip that you see at family gatherings or gameday parties for chips and crackers. It’s a simple mixture of dried onions, cream cheese, and sour cream.
- Mix together the cream cheese, sour cream, and dried onions.
- Spread the onion dip over the top of the focaccia just before putting it into the oven.
- Drizzle the focaccia with the herb and oil mixture.
- Bake as directed.
10. Breakfast Topped Focaccia
This focaccia has all of the breakfast favorites of bacon, cheese, and scrambled eggs. You will not usethe herb mixture for this focaccia topping.
- Crumble cooked bacon over the focaccia just before putting it in the oven.
- Bake as directed.
- While the focaccia is baking, make the scrambled eggs.
- Just before the focaccia finishes baking, spread the scrambled eggs on top and sprinkle the focaccia with cheddar cheese.
- Return the focaccia to the oven to finish baking and melt the cheese.
11. Aritchokes and Olives Topped Focaccia
This focaccia topping might be a bit more Greek than the others, but the combination of artichokes and olives with the chewy focaccia is delicious.
- Spread the artichokes and olives in an even layer on the focaccia just before baking.
- Drizzle the focaccia and toppings with the herb and oil mixture.
- Bake as directed.
- Optional: sprinkle the focaccia with parmesan cheese just before it’s done baking and return it to the oven to melt the cheese.
12. Onions, Spinach, and Goat Cheese Topped Focaccia
This focaccia topping is a bit unique with caramelized onions, spinach, and goat cheese.
- Spread a thin layer of spinach on top of the focaccia before baking.
- Layer thinly sliced onions over the spinach.
- Drizzle the focaccia with the herb and oil mixture.
- Bake as directed.
- Just before the focaccia is done baking, sprinkle goat chees on top and return it to the oven to finish baking and melt the cheese.
13. Pizza Party Focaccia
As the name suggests, this focaccia is everything you love from a pizza party but a bit lighter with marinara sauce, pepperoni, and mozzarella cheese.
- Spread a light layer of pizza sauce over the focaccia just before putting it into the oven.
- Evenly spread a thin layer of pepperoni on top and drizzle the focaccia with the herb and oil mixture.
- Bake as directed.
- Just before the focaccia is done baking, sprinkle it with mozzarella and return it to the oven to finish baking and melt the cheese.
14. Summer Squash Topped Focaccia
This is a great way to use your summer squash and zucchini, and it still tastes great.
- Slice one summer squash and one zucchini and chop an onion and bell pepper.
- Saute the squash, onion, and bell pepper in one tablespoon of olive oil until tender.
- Spread a light layer of marinara sauce on the focaccia just before baking and add a thin layer of vegetables on top.
- Drizzle the focaccia with the herb and oil mixture.
- Bake as directed.
- Just before the focaccia is done baking, sprinkle mozzarella or parmesan cheese on top and return it to the oven to finish baking.
15. Sea Salt and Cherry Tomato Topped Focaccia
This is a very basic focaccia topping with a light dusting of sea salt and cherry tomatoes.
- Just before putting the focaccia in the oven, spread cherry tomatoes over the top.
- Sprinkle the focaccia with sea salt and oil instead of the herb mixture.
- Bake as directed.
- Optional: Just before the focaccia is done baking, sprinkle parmesan on top and return it to the oven to finish baking and melt the cheese.
16. Jalapeno Cheddar Focaccia
For this focaccia, you mix the jalapenos into the dough instead of putting them on top. It gives the focaccia a nice kick.
- While mixing the dough, add in the sliced or diced jalapenos. Let it rise and spread the dough as directed.
- Drizzle the focaccia with the herb and oil mixture just before putting it in the oven.
- Bake as directed.
- Just before the focaccia is done baking, sprinkle cheddar cheese on top and return it to the oven to finish baking and melt the cheese.
