Pizzeria Meatloaf
Ingredients
1 ½ pounds of lean ground beef
2 large eggs
1 small can tomato paste
½ cup bread crumbs
1 can olives, chopped
¾ cup chopped red pepper
1 teaspoon Zesty Pizza and Pasta Spice
½ cup grated parmesan cheese
½ cup shredded mozzarella cheese
4-6 slices or chopped cherry tomatoes
½ teaspoon salt
¼ teaspoon pepper
Directions
Heat oven to 350 degrees. Mix ground beef with eggs, tomato paste and bread crumbs. Add the peppers to the mixture, reserving 3 Tablespoons for the topping. Reserve 1 Tablespoon olives for topping and add the remaining olives to the meat mixture. To finish the mixture, add the Zesty Pizza and Pastry Spice, parmesan cheese, salt, and pepper. Blend well. Using the Mini Meatloaf/Muffin Pan with drain holes, fill each cup with approximately 1 cup of meat mixture. Place the meat filled pan into the 2nd pan to catch any grease drippings that occur during cooking.
Combine the remaining red peppers, olives, tomatoes, mozzarella cheese, and a pinch of Zesty Pizza and Pastry Spice. Toss mixture and set aside.
Bake meatloaf for 30 minutes. Top with the mozzarella cheese mixture and cook for 5 more minutes or until temperature reaches 160 degrees. Yield: 6-8.
Red Pepper Classic Meatloaf
Ingredients
1 ½ pounds lean ground beef or turkey
¾ cup oatmeal
¾ cup finely chopped onion
¾ cup chopped red pepper
½ cup ketchup
2 eggs
1 Tablespoon Worchestershire sauce
½ teaspoon salt
¼ teaspoon pepper
Directions
Heat oven to 350 degrees. In a large bowl, mix all ingredients thoroughly. Using the Mini Meatloaf/Muffin Pan with drain holes, pack and form about 1 cup of meat mixture into the cups. Place meat filled pan over 2nd pan to catch any grease droppings that may occur as it is cooking. Bake for 35 minutes or until it reaches 160 degrees. Let stand for 5 minutes in pan. Yield: 8 servings.
Turkey Spinach Meatloaf
Ingredients
¼ cup bread crumbs
1 Tablespoon olive oil
1 onion, diced
6 oz. bag baby spinach leaves
1 pound ground turkey
2 Tablespoons finely grated Parmesan
2 eggs
½ teaspoon salt
½ teaspoon pepper
1/8 teaspoon nutmeg
Directions
Heat oven to 375 degrees. Heat 1 Tablespoon olive oil in a large skillet over medium heat. Add onion and cook until soft. Add spinach and stir until just wilted. Transfer to a large bowl and add bread crumbs and ground turkey. Stir. Add cheese, eggs, salt, pepper, and nutmeg to the mixture. Mix well. Form approximately 1 cup of the mixture into the Mini Meatloaf/Muffin Pan with drain holes. Place meat filled pan into 2nd pan to catch any grease drippings that may occur. Bake approximately 35 minutes or until temperature reaches 170 degrees. Let stand in pan for 5 minutes before serving. Yield: 6 servings
