How would you like to mix up your biscuits ahead of time, freeze them, and then pop just what you need into the oven to go with your salad or other easy meal?

As long as we’re talking baking powder biscuits, you can. Biscuits that rely on baking soda don’t work so well; the leavening will be long gone by the time you bake them.

Mix your baking powder biscuits just like the recipe says. Cut them out and put them on an ungreased baking sheet. Put the whole sheet in the freezer. Once frozen, lift them off the baking sheet and put them in a heavy plastic bag. Now you can store them in the freezer until you need them. In a heavy bag, your biscuits should last for a month or more in the freezer.

When you are ready for some hot biscuits, take what you need from the freezer and bake according the recipes directions. Don’t thaw the biscuits before baking. You’ll have great biscuits—almost instantly.
