We absolutely love Sweet Hungarian Paprika so this recipe was an easy choice for dinner. It makes a fabulous chicken dish.
Hungarian paprika chicken is a classic dish usually made with a sour cream sauce and served with pasta. We matched it up with black orzo and it made a terrific accompaniment.
4 large chicken breasts
salt and pepper
2 tablespoon butter
1 large sweet onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup Tuscan Sun Dried Tomato Pieces or other sun dried tomatoes
2 tablespoons Sweet Hungarian Paprika
1 teaspoon alt
1/4 teaspoon pepper
1 teaspoon dried thyme
1 1/2 cups chicken broth
3/4 cup sour cream
1 tablespoon corn starch
dry parsley for garnish
- Salt and pepper the chicken. Set aside.
- Sauté the onions and peppers in the butter in a heavy skillet until they are tender. Add the tomato pieces, salt, pepper, paprika, and thyme. Add the cornstarch and stir. Add the broth and stir. Cover and simmer for about 45 minutes, scraping the bottom with a flat bottomed spatula from time to time to keep it from scorching until the chicken is cooked.
- Just before the chicken is done, add the sour cream and stir. Adjust the salt and pepper if necessary.
- Serve hot with pasta or rice. Garnish with the dry parsley.
