If you have left over chicken or don’t mind frying a couple breasts, this is an easy chicken casserole to make. It’s a zesty Italian dish made easy with a box of stuffing mix and a jar of tomato bruschetta.

1 16-ounce package Stove Top Stuffing Mix® for chicken, or equal
2 cloves garlic, minced
1 tablespoon Zesty Italian Seasoning or other Italian spice blend.
1 12-ounce jar Elki Tomato Bruschetta, or equal
2/3 cup warm water
2 cloves garlic, minced
2 cups cubed cooked chicken breasts
2 cups shredded mozzarella cheese
Preheat the oven to 350 degrees.
- Place the stuffing mix in a large bowl. Sprinkle the minced garlic and Italian seasoning over the stuffing.
- Add the bruschetta and water to the stuffing mix and stir until moistened. Do not over-stir. Set aside 2/3 cup of the stuffing. Toss the cooked chicken into the rest of the stuffing mix.
- Place about half of the reaming stuffing mix in a 3-quart baking dish. Cover with half of the grated cheese. Place the other half of the stuffing over the cheese layer. Add the remaining cheese. Cover with the casserole with the set-aside stuffing mix.
- Bake for 25 minutes or until the cheese is bubbling.
