This salad is equally as good as the pear variation.  It is made with greens, a garden type salad served with a dressing.  Instead of blue cheese, we used havarti.  Raspberry vinaigrette is perfect.

This recipe is sized to serve four.  You may adjust quantities of ingredients to suit your preferences.

Ingredients:

1 bag of prepared salad greens, 8 to 10 ounces
2 ripe peaches, washed, peeled, and sliced
1/2 red bell pepper, sliced
3/4 cup glazed pecans
1/ 2 cup havarti or other soft cheese cut into 1/4-inch cubes
Dressing of your choice.  A vinaigrette works nicely.

Directions:

  1. Divide the greens into four bowls or onto four salad plates.
  2. Arrange the peach slices on top of the greens.
  3. Lay several slices of red pepper over the pears.
  4. Sprinkle with pecans and cheese.  Drizzle with dressing and serve.

Note:  It is easy to glaze the pecans.  See how to glaze nuts here.
