For a change of pace, use your leftover turkey to make this quick and easy salad.
2 cups cooked turkey meat, chopped
1/2 teaspoon garlic powder
1 cup salsa or taco sauce
1/2 teaspoon of chili powder or to taste
1 can red kidney beans, drained
Tortilla or corn chips
Chopped iceberg lettuce
Sliced ripe olives
Sliced green onions
Sour cream (optional)
1. In a skillet, heat the turkey meat with the garlic powder, taco sauce or salsa, chili powder, and beans.
2. Line the serving bowls with chips and then the chopped lettuce. Spoon the meat mixture onto the lettuce. Sprinkle with the chopped tomatoes, green onions, and sliced olives. Top with the shredded cheese.
Serve with a dollop of sour cream, salsa, and guacamole if desired.
