This recipe calls for salmon but works for any fish, even canned tuna.


1 salmon fillet, about 5 ounces, cooked and crumbled
3 tablespoons mayonnaise
1 tablespoon lemon juice
2 green onions, chopped
1 stalk celery, finely chopped
fresh ground black pepper to taste
salt to taste
good quality bread
lettuce leaves
1 tomato, thinly sliced


Mix the crumbled salmon, mayonnaise, lemon juice, chopped onion, and celery together with a fork.  Salt and pepper to taste.  Spread on bread slices.  Top with lettuce, tomato, and additional slices of bread.
