We love the tart taste of apricots. But dried apricots can be a little over-whelming. We toned the flavor down with plenty of butter and honey.
You can use this same technique to make peach or pear butter.
Ingredients
1 cup dried apricots
1/2 cup hot water
1 cup butter
1/2 teaspoon cinnamon
1/2 cup honey or to taste
Directions
1. Place the apricots and hot water in a microwave safe bowl and cover with plastic wrap. Heat for one minute or until the contents are steaming hot. Set aside to steep.
2. Place the steamed apricots in a food processor or blender. Add the butter. The butter should melt with the hot apricots. Puree together.
3. Add the cinnamon and honey and mix. Remove the fruit butter to the refrigerator to cool.
This fruit butter will be a liquid when warm and become firm in the refrigerator. It will melt on hot muffins, pancakes, or toast. Because it becomes firm, you can place it in molds to create decorative shapes.
