Blackout cakes are really cool!

When you have zero time and you still need a cake that will impress, consider a blackout cake.  They’re unusual, moist, and scrumptious.  You make them with a box cake mix and fill them with a premade dessert filling or pudding and you don’t have to frost them.  They may not be fancy but they’re easy and unusual enough that you’ll catch people’s attention.

Here’s how to make them:

  • Step 1: Bake a two layer cake.  You can use your favorite scratch recipe or a box cake mix from the store.
  • Step 2: After the cake has cooled, slice each layer horizontally to make four layers.
  • Step 3: Place the first half-layer on the cake stand.  Cover it with a layer of dessert or pastry filling or pudding from a mix.  Add another layer and repeat the filling.  Do it again so that you have three layers with filling between.
  • Step 4: Take the last half layer and crumble it into coarse crumbs about a 1/4-inch in size or a little larger.  Set aside.
  • Step 5: Cover the top and the sides of the cake with more filling.
  • Step 6: Spread the crumbs across the top of the cake and gently press crumbs onto the sides.  The cake should be covered with a layer of crumbs.
