This is a very good, healthy wild rice salad recipe.  It is a simple mixture of ingredients with a lemon vinaigrette.  Of course, you can use another vinaigrette of your choice.  A cranberry vinaigrette with this salad is fantastic.

Consider cooking the rice the night before.  Then, if you choose a commercial dressing, this is a very quick salad to assemble.

In preparing the zest, be careful to grate only the outer peel of the orange not the white which is bitter.

4 cups cooked wild rice, about 1 cup uncooked
1 cup dried cranberries
2/3 cup chopped pecans
6 green onions, thinly sliced the white and lighter green portions only

zest from one orange

salt to taste

For the dressing

3 tablespoons lemon juice
3 tablespoon olive oil
1 teaspoon granulated sugar

  1. In a medium bowl, mix the rice, cranberries, pecans, and sliced green onions together.
  2. In another bowl, stir the lemon juice, olive oil, and sugar until the sugar is dissolved.
  3. Toss the dressing with salad.  Salt to taste and serve well chilled.
