We love fish.  But we live a long ways from the ocean and buying fresh fish can be tricky.  We would like to pass along the following suggestions:

1. Know your retailer.  Ask him or her where the fish is from, when they received it, and how long it has been unfrozen.  If you don’t get answers that you are confident in, go elsewhere.
2. Don’t be afraid to buy frozen fish.  If it is flash-frozen properly (usually onboard the vessel) and thawed properly, the product should be of a good quality.  It’s the only practical way to enjoy a choice of seafood all season, especially if you live a long ways from the sea.
3. Examine the fish carefully.  Fresh fish should have clear eyes, a good skin color, and the flesh should feel firm.  If the fish smells strong, don’t buy it.
