Ingredients
2 cups uncooked black calamari orzo
1/4 cup thinly sliced green onions (about one or two)
1 red pepper cut into small strips or diced
1 cup grated mozzarella cheese
3 cups baby spinach
Dressing
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
1 tablespoon thinly sliced fresh chives
1 clove minced garlic
1 tablespoon minced shallots
1 tablespoon lemon juice
1 teaspoon salt
Directions
- Cook the 2 cups of calamari orzo by bringing four cups of water to a boil on medium heat, adding the orzo, covering the pan and turning down the heat to medium low for ten to fifteen minutes, or until pasta is cooked to al dente. Drain and cool pasta.
- Prepare the dressing by combining 1/2 cup mayonnaise, 1/2 cup sour cream, 1/2 cup buttermilk, 1 tablespoon thinly sliced chives, 1 clove minced garlic, 1 tablespoon minced shallots, 1 tablespoon fresh lemon juice. Add salt and pepper to taste.
- Place the cooked pasta in a large bowl. Pour the dressing over the pasta and toss to coat. Fold in 1/4 cup green onions, 1/4 cup red pepper, the cup of grated mozzarella cheese, and the baby spinach. Serve cold.
