This easy glaze will turn ordinary pork chops into wonderful company fare.
The Red Currant Jelly will stain the meat a slightly darker color but likely no one will notice. You can use a different jelly, a lighter colored jelly, if you prefer such as Peach Pineapple Paradise or apple jelly.
This recipe also works well with lamb chops.
Ingredients
1/4 cup Red Currant Jelly
2 tablespoons sweet onion, Vandalia or equal, finely minced
1 tablespoon lemon juice
1 tablespoon soy sauce
pepper and salt to taste
Directions
1. Cook all ingredients in a small sauce pan until bubbly. If you need more liquid, add a tablespoon or two of water or broth.
2. Cook the pork chops. Halfway through the cooking, brush the pork chops with the red currant glaze. Brush them again with glaze as they finish cooking. If you have any leftover glaze, brush the reminder on the pork chops as soon as they come off the grill or pan.
Yield: Enough glaze for eight to ten pork chops.
