Pumpkin Nut BreadThis is a classic pumpkin nut bread made into mini-loaves.  This quick bread is easy to make.  In our test kitchen, this was a favorite.

Ingredients

3 cups all purpose flour
1 teaspoon cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

1 cup vegetable oil
3 large eggs
3 cups sugar
1 small can pumpkin (16 oz)

2/3 cup walnut pieces

Directions

Preheat oven to 350 degrees.

  1. Mix the flour, cloves, cinnamon, nutmeg, baking soda, baking powder, and salt, together in a medium bowl.   In another bowl, stir the oil, eggs, pumpkin, and sugar together.
  2. Make a well in the flour mixture and add the liquid mixture.  Stir just until blended. Stir in the nuts.
  3. Turn the batter into well greased and floured mini-loaf pans. Bake 25 to 35 minutes or until done.  (Baking times will vary on the size of the pans.  Test for doneness by inserting a toothpick in the center of the loaves.  If it comes out clean, it should be done.)   Let cool for ten minutes and then remove them to a wire rack to cool completely.
