Face Crab SandwichOne of our favorite restaurants in Idaho Falls serves a great open face crab and avocado sandwich.  We decided to make our own.

This is an eat-with-a-fork recipe.  Crab and avocado are stacked on toast and then drizzled with a cheese sauce.

This is a great busy night dinner.  It can be made in less than ten minutes.  You can make this with either imitation crab or shelled crab meat.  The following recipe serves three.

The microwave cheese sauce recipe works for other dishes as well.

Ingredients

6 slices of quality light wheat or white bread, toasted
1 pound crab meat removed from the shell or imitation crab meat
2 ripe avocados
paprika
2 medium tomatoes
1 recipe cheese sauce

To assemble the sandwiches

Cut the toast diagonally.  Arrange four of the cut toast pieces (two full slices) on each plate so that they overlap.  Slice the avocados and arrange the avocado pieces on the toast.  Distribute the crab over the avocado pieces.  Pour cheese sauce over the sandwiches and sprinkle with paprika.  Garnish with tomato slices.

To make the cheese sauce

3 tablespoons butter
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 1/2 cups shredded sharp cheddar cheese
1 1/2 cups milk

  1. Melt the butter in the microwave in a bowl.  Add the flour to the butter and stir to make a thick paste.  Gradually add the milk, stirring with a whisk after each addition.  Add the cheese.
  2. Cook in the microwave on high heat for 1 1/2 to 2 minutes or until the sauce is bubbly and thick, stopping every 30 to 40 seconds to stir the mixture.
