How to Make Luscious Fruit Buckles

(Using a Caramel Swirl Cake/Buckle Mix)

A Caramel Swirl Crumb Cake [1] is a buckle—a cake with hills and dales and ripples of caramel throughout.  It’s a great cake.  By adding fruit or fruit filling to our [2], you can make a fruit buckle.  The directions below show how simple it is with our crumb cake mix [1].

By adding more volume with a filling, you may need to extend your baking time by several minutes especially if the filling is cold or the fruit is frozen.

Cherry or Cherry Pecan Buckle

This is a luscious cherry buckle made with cherry pastry filling.  It illustrates the method for making other buckles with pastry fillings.

Prepare the pan.  We line the pan with parchment paper [3] and remove the cake from the pan in five minutes by grasping the edges of the parchment paper and lifting.

  1. Mix the cake per package instructions.
  2. Add 2 teaspoons cherry flavor [4] and 1/2 cup chopped pecan [5]s if you are using nuts.
  3. Spread the batter in a prepared pan.
  4. Squeeze lines of cherry pastry filling [6] across the batter.  Use 1 to 1 1/2 cups filling
  5. Add the topping included in the cake mix [1] and bake.
  6. Serve with ice cream or whipped cream.  Decorate with caramel [7] or white chocolate designer dessert sauce [8].

Note: You can use canned pie filling [9].  Pastry fillings have more intense flavors and the fruit is more finely chopped.
