(Using a Caramel Swirl Cake/Buckle Mix)
A Caramel Swirl Crumb Cake is a buckle—a cake with hills and dales and ripples of caramel throughout. It’s a great cake. By adding fruit or fruit filling to our , you can make a fruit buckle. The directions below show how simple it is with our crumb cake mix.
By adding more volume with a filling, you may need to extend your baking time by several minutes especially if the filling is cold or the fruit is frozen.
Cherry or Cherry Pecan Buckle
This is a luscious cherry buckle made with cherry pastry filling. It illustrates the method for making other buckles with pastry fillings.
Prepare the pan. We line the pan with parchment paper and remove the cake from the pan in five minutes by grasping the edges of the parchment paper and lifting.
- Mix the cake per package instructions.
- Add 2 teaspoons cherry flavor and 1/2 cup chopped pecans if you are using nuts.
- Spread the batter in a prepared pan.
Squeeze lines of cherry pastry filling across the batter. Use 1 to 1 1/2 cups filling
- Add the topping included in the cake mix and bake.
- Serve with ice cream or whipped cream. Decorate with caramel or white chocolate designer dessert sauce.
Note: You can use canned pie filling. Pastry fillings have more intense flavors and the fruit is more finely chopped.
Classic Blueberry Buckle (Use Fresh or Frozen Berries)
Prepare the pan by greasing it or lining it with parchment paper.
- Mix the cake per package instructions.
- Spread the batter in a prepared pan.
- Add 1 1/2 cups individually frozen or fresh blueberries.
- Add the topping included in the cake mix and bake.
- Serve with ice cream or whipped cream. Decorate with lemon zest designer dessert sauce.
Blueberry White Chocolate Buckle
Prepare the pan by greasing it or lining it with parchment paper.
- Mix the cake per package instructions.
- Add 2 teaspoons blueberry flavor and 2/3 cup white chocolate chips.
- Spread the batter in a prepared pan.

- Add one teaspoon blueberry flavor and 3/4 cup blueberry tidbits.
- Spread the batter in a prepared pan.
- Squeeze lines of lemon pastry filling across the batter. Use 1 to 1 1/2 cups filling

Raspberry Cream Buckle
Prepare the pan by greasing it or lining it with parchment paper.
- Mix the cake per package instructions.
- Add one teaspoon raspberry flavor and 3/4 cup raspberry tidbits.
- Spread the batter in a prepared pan.

Apple Cinnamon Burst Buckle
Prepare the pan by greasing it or lining it with parchment paper.
- Mix the cake per package instructions.
- Add two teaspoons apple flavor or brown sugar flavor and 3/4 cup cinnamon chips.
- Spread the batter in a prepared pan.
- Squeeze lines of apple pastry filling across the batter. Use 1 to 1 1/2 cups filling

Peach Buckle (Use Fresh or Frozen Peach Slices)
Prepare the pan by greasing it or lining it with parchment paper.
- Mix the cake per package instructions.
- Spread the batter in a prepared pan.
- Add 1 1/2 cups frozen or fresh peach slices.
- Add the topping included in the cake mix and bake.
- Serve with ice cream or whipped cream. Decorate with mango, caramel, or white chocolate designer dessert sauce.
Ginger Rhubarb Buckle (Use Fresh or Frozen Rhubarb)
This is an outstanding buckle. Do not omit the ginger.
Prepare the pan by greasing it or lining it with parchment paper.
- Mix the cake per package instructions.
- Spread the batter in a prepared pan.
- In a small bowl, mix 2 cups sliced or chopped rhubarb with three tablespoons sugar, 1/2 teaspoon ground ginger, and two teaspoons cornstarch. Spread the rhubarb mixture across the top of the batter.
- Add the topping and bake.
- Serve with ice cream or whipped cream. Decorate with lemon zest designer dessert sauce.
