This is a great salad.  We served samples to customers in our store and people loved it.  Keep this recipe.

When we were handing out samples, we heard, “Isn’t wild rice expensive?”   No, when you consider the yield, it’s not.  The rice in this recipe only costs 35 cents per serving as of this writing.

Ingredients 

1 cups wild rice
2 cups water
1 teaspoon salt
2 cups diced ham

3 stalks celery, finely sliced
6 green onions, sliced
2 cups frozen peas
1/2 cup chopped walnuts
3/4 cup dried cranberries

1/2 cup mayonnaise
1/2 cup plain yogurt
1 tablespoon lemon juice
1 teaspoon sugar


Directions

  1. Cook the wild rice according to package instructions using the water and the salt.
  2. In a large bowl, mix the cooked rice, celery, onions, peas, walnuts, and cranberries together.
  3. In a small bowl, make the dressing by whisking the mayonnaise, yogurt, lemon juice, and sugar together.
  4. Fold the dressing into the salad.  Chill completely before serving. This makes a large salad—eight to ten servings.
