Butterscotch BlondiesThese started out as mint blondies.  But mint just wasn’t quite right.  Butterscotch chips, instead of mint chips, are perfect.


1/2 cup butter
3/4 cup brown sugar
1 teaspoon vanilla
2 large eggs
1 large egg yolk
3/4 cup white chocolate chips, melted
1/2 teaspoon salt
1 1/3 cup all-purpose flour
1 cup walnut pieces
3/4 cup butterscotch baking chips


Preheat the oven to 350 degrees.    Grease a 9 x 9-inch baking pan.

  1. Cream the butter and sugar together.  Beat in eggs and egg yolk, one at a time.  Add the vanilla.  Drizzle in the melted white chocolate while beating.
  2. Whisk the salt and flour together.  Fold the flour into the sugar and egg mixture.  Add the butterscotch chips and nuts.
  3. Scrape the batter into the prepared pan.  Bake for 30 to 35 minutes or until done.
