People are avid about raspberry. We have a fiercely loyal following for our Raspberry Sour Cream Pancake Mix. For those who prefer to cook from scratch, we wanted to create a from-scratch recipe.
We started with a recipe for sour cream banana pancakes. The bananas were placed on top of the pancakes, not added to the batter, so we thought we would just change the raspberry and flavor inclusions and be done. Then we decided that we wanted more sour cream. Finally, we added more liquid to get them the consistency that we wanted.
These are very good pancakes. We served them to visitors in our store with red raspberry syrup and they loved them. You can purchase both the syrup and a Raspberry Sour Cream Pancake Mix online or in our store.
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3 tablespoons granulated sugar
1 teaspoon salt
2 large eggs
2/3 cup sour cream
1 cup milk
1 teaspoon raspberry flavor
1/2 teaspoon lemon flavor
2/3 cup Raspberry Tidbits Baking Chips
- Whisk the flour, baking powder, sugar, and salt together.
- In another bowl, whisk the eggs, sour cream, milk, and flavors together.
- Add the wet ingredients to the dry ingredients. Add the raspberry tidbits. Stir only until combined. Some lumps will remain.
- Cook as for pancakes, a couple minutes on each side on a hot griddle. Serve hot.
