My dad was a fisherman.  We ate fish at least once a week.  I had to have tartar sauce with most fish and still enjoy a good tartar sauce.  I’ve been making this tartar sauce, some variation, since I was a kid. 

The basic tartar sauce was mixture of mayonnaise, lemon juice, minced onion, and minced green pepper.  Often, but not always, we added minced sweet pickle to it.  I would rarely measure anything, just mix what seemed right.

Here you will find four recipes.  The first two are mild, traditional tartar sauces.  The second two are more adventuresome with some kick from chipotle peppers.

Classic Tartar Sauce

This is the recipe that I’ve been making since I was kid.  It is a traditional tartar sauce that is similar to many tartar sauces served in restaurants—although the minced green pepper may not be common.  But we consider the minced pepper essential.

3/4 mayonnaise
1 1/2 tablespoons minced sweet pickles
1 1/2 tablespoons finely chopped sweet onion such as Vandalia
1 tablespoon minced bell pepper
1 tablespoon lemon juice
Mix all the ingredients together.  Refrigerate for at least one hour before serving.

Tartar Sauce with Capers

This is a variation of Classic Tartar Sauce.  Capers have a strong flavor and replaces the lemon juice in the original recipe.

3/4 mayonnaise
1 1/2 tablespoons minced sweet pickles
1 1/2 tablespoons finely chopped sweet onion such as Vandalia
1 tablespoon chopped bell pepper
1 tablespoon capers, chopped
Mix all the ingredients together.  Refrigerate for at least one hour before serving.

Chipotle White Tartar Sauce

This tartar sauce has some kick to it from the chipotle peppers in adobo sauce.

1/3 cup mayonnaise
1/3 cup sour cream
2 teaspoons minced canned chipotle chilies in adobo sauce
1 tablespoon minced fresh cilantro leaves
fresh lime juice from 1/2 of a small lime

Mix the mayonnaise and sour cream together in a bowl.  Add the minced chipotle, cilantro, and lime juice.  Mix well and refrigerate for an hour.

Chipotle Ranch Tartar Sauce

We made this with Chipotle Ranch Dip and then toned it down with the addition of mayonnaise. Again, this tartar sauce has some kick to it from the chipotle peppers in adobo sauce.

1/3 cup Chipotle Ranch Dip
1/2 cup mayonnaise
1 tablespoon minced fresh cilantro leaves
fresh lime juice from 1/2 of a small lime

Mix all the ingredients together.  Refrigerate for at least one hour before serving.
