Making loaves with your bread machine is easy. Follow the mix or recipe directions but set your machine on dough setting. Take the dough out and shape the mini-loaves by hand. Use the same technique that you would use for larger loaves, stretching the dough around the outside and tucking it in at the bottom. Let the dough rise until it doubles in size and is puffy and soft. Bake in your greased mini-loaf pans.
Because your loaves are much smaller they will take less time to bake, usually about half the time for small loaves and maybe two-thirds the time for larger loaves. For soft-sandwich-type breads, 15 to 18 minutes at 350 degrees should be about right. For larger loaves, 18 to 22 minutes will be about right. But baking times are always variable and depend on your oven, the pans, and recipe. If you are using an insta-read thermometer, the internal temperature of the loaves should reach 190 degrees.
Once baked, remove the bread from the pans and let the bread cool on wire racks. For soft breads, store in airtight bags and use within three days.
