On those busy days, you can fancy up a boxed cake mix in a hurry with mint chips. Here’s how to make a Mint Chocolate Layer Cake using a mix.
Mix the cake according to the directions on the package. We prefer a chocolate cake mix but a yellow or white cake mix will do also. Add 3/4 cup mint chocolate chips. Bake as directed on the package.
For the mint frosting
3/4 cup mint chocolate chips
1/4 cup butter
1 teaspoon vanilla extract
1 pinch salt
3 cups powdered sugar
1/3 cup milk
- Melt the chocolate chips and butter together. Add the vanilla and salt.
- Fold in the powdered sugar and milk, alternately, until you reach frosting consistency. If necessary, add more powdered sugar or milk.
Frost your two-layer cake once the cake has cooled. This can also be made into a sheet cake.
