Chocolate Layer CakeOn those busy days, you can fancy up a boxed cake mix in a hurry with mint chips.  Here’s how to make a Mint Chocolate Layer Cake using a mix.

Mix the cake according to the directions on the package.  We prefer a chocolate cake mix but a yellow or white cake mix will do also.  Add 3/4 cup mint chocolate chips.  Bake as directed on the package.

For the mint frosting

3/4 cup mint chocolate chips
1/4 cup butter
1 teaspoon vanilla extract
1 pinch salt
3 cups powdered sugar
1/3 cup milk

  1. Melt the chocolate chips and butter together.  Add the vanilla and salt.
  2. Fold in the powdered sugar and milk, alternately, until you reach frosting consistency.  If necessary, add more powdered sugar or milk.

Frost your two-layer cake once the cake has cooled.  This can also be made into a sheet cake.
