How do the restaurants make such picture perfect platters of burritos, beans, and rice?  They load up the plate and put it in a hot oven for five minutes.  That’s the secret and it’s that simple.

Five Steps to Great Burritos and Enchiladas

This is so simple that you won’t even need a recipe.

  1. Make the filling.  It can be anything that you want.  Cheese enchiladas can be as simple as grated mild cheddar.  Sautéed ground beef and onions work well especially with a bit of garlic.
  2. Fry the tortillas.   Use just a bit of oil and fry both sides.   Do not overcook or they will be stiff and brittle.  While the tortillas are frying, preheat the oven to 400 degrees.
  3. Fill the tortillas.  Fill and roll the tortillas.  Use a measuring scoop to get the same in each—usually a third or half cup will do.  If your meat filling has cooled, heat it the microwave so that you lading warm filling into your tortillas.
  4. Load the platter.  Put two or three of the filled tortillas on a platter.  Load on some Spanish rice and some beans.  Black beans or refried beans from a can will do.  Ladle a red or green sauce over the tortillas.
  5. Heat it in the oven.  Five minutes at 400 degrees will do.  Remove the plate from the oven and garnish with more cheese.  Stick it back in the oven for a minute to melt the cheese.  Serve hot garnished with sour cream, guacamole, lettuce and tomatoes, or olives.
